Do you FÆNCY FRIES?
 

FÆNCY FRIES uses the Nordic letter Æ. Visually, it combines a written and a phonetic version of the English word fancy that reads [fency]. Established in 2016, Faency Fries is as a concept of simple high quality street food. The company was the first in the Czech Republic to start making french fries from fresh potatoes, sourcing them from local suppliers in the foothills of the Beskydy Mountains and the Vysočina region. 

Choosing the right potatoes is a key factor in production. Faency Fries aims to maintain the same quality potatoes throughout the year, and therefore always consult with their suppliers on the selection of the right variety - which then undergoes rigorous testing - before the fries hit the stands. “First, the raw potato is cut, which is fried to a certain temperature and time, and after a while, the process is repeated in a similar way,” said Jan Haščák, co-owner of Faency fries said the company.

The company takes inspiration from the Flemish preparation process of fries. After slicing, fresh potatoes are fried twice. First for a longer time at a lower temperature and then for a shorter time at a higher temperature. Faency Fries exclusively uses a mild rapeseed oil, pressed in the country, which lets the potato’s flavours come to the surface.  

This also ensures their fries are suitable for both vegetarians and vegans. The fries are then salted to taste. On top of the fries (literally) you can then add their in-house sauces and toppings. To quench your thirst, they also offer their own range of flavoursome soft drinks.

The company was founded by René Müller who is currently on Forbes list of 30 under 30 list. Müller, last year sold his business to Jakub Herman, who had previously owned two franchisees in Zlín and Opava. The company now has 15 branches in the Czech Republic, one store each in Slovakia and Croatia and is looking at expanding further abroad. Their yearly sales target is aiming for 1.85 million Euros (now, that’s a lot of potatoes).

Before departing the company, Müller said he build the company structure of the business so that everyone could understand it. “Even a layman who has nothing to do with gastro-business can start a franchise," believed Müller.

This turnkey concept wants to be above the quality and standards of the regular fast-food category crew. The business development team at Faency Fries will teach their franchisee’s not only how to fry potatoes, but how to run the entire business from fit-out to mopping the floors.
